The presence of some kernels of the triticum durum dicoccum variety of spelt, found in the tomb of The Chariot of Colle del Capitano, has proved that it was cultivated within the area as far back as 6th century B.C. Thanks to it being so specific, so unique and of such top quality, the spelt of Monteleone di Spoleto was awarded the P.D.O. on 21/05/2007. It is sown in spring and harvested in August. The spelt of Monteleone di Spoleto is the most prized and unique species that produces not white, but light tobacco coloured flour (the same colour as the kernel). For human consumption it has to undergo a process known as husking which enables the outer husks to be removed.
